Whole- Cut into portion sizes.
Uncut- Selected larger potatoes,
left whole.
Small cut- As whole, but cut
smaller for ‘traditional roast’ potatoes.
Chipped- (Selected Maris Piper
only) standard 12mm cut.
Sliced- Thick (10mm) Medium
(6mm) Wafer Thin (3mm). Diced- Large (20mm) Small
(10mm).
Grated/Straw- (Fine Julienne).
Parisienne- 27mm spherical potatoes.
Chateau- 7 sided barrel shape,
individually machine cut to ensure consistent size and shape.
Mids- Small even sized potatoes
peeled or washed.
Parmentier- Selected larger
potatoes cut (by hand) into large 20mm cubes.
Baking potatoes- 15kg box’s-
large (40’s) med (50’s) small (60’s).
